Toss festive bow tie pasta with a pleasing melange of sweet sun-dried tomatoes, savory sauteed mushrooms and nutty pesto for a colorful, hearty entree or side dish.
Slow cooked shredded ham in a brown sugar and mustard sauce. This is the sort of thing you prepare a day or so in advance so that when you serve it you don't really have to do much of anything at all. Great for times when people will be in and out, eating irregularly all day.
Fajita seasoning makes this salad feisty. The chicken is rubbed with it before grilling, and the wonderful bean/corn/salsa mixture is cooked in a bit of it as well. Add lots of greens, onions and tomatoes, and you have an amazing salad.
I invented this recipe when I started running out of smoothie components. I think it tastes like a cross between peaches and cream, and egg nog (there are no eggs in it though). The oats and/or wheat germ can be omitted for a smoother smoothie.

For a refreshingly different side dish, bake spaghetti with a tart and creamy blend of sour cream, butter, lemon juice and lemon peel. Top it off with a grating of Parmesan and a handful of freshly chopped parsley.
It's just one of those salads that was created on a gorgeous summer evening with a bunch of stuff I had in the fridge. Grilled asparagus is tossed with spinach and parmesan cheese. My husband and I love it!
