Healthy Appetizers: Smoked Fish Dip | Submitted By: KPERKINS100
This recipe for smoked fish dip is world class, puts most others to shame, and is served in several prominent restaurants on the gulf coast of Florida. We used smoked whitefish, well boned, but any other smoked fish should work. Serve with crackers, lemon or lime wedges, and capers.
Low-Fat Recipes: Oranged Cranberry Sauce | Submitted By: Barbara Yoder
This recipe was graciously shared with me by a Jamaican friend, many years ago. It makes a delicious sauce, different from any other cranberry sauce I've ever tasted or made. It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer. A quick delicious Indian-style curry with spinach, chick peas, onions, and/or whatever veggies you have. I have added cauliflower, potatoes, and sweet potatoes to this recipe in the past. All were very good. Serve with nan, pita or rice if desired.
Healthy Salads: Asian Noodle Salad | Submitted By: Christine
This Asian salad has a decidedly Italian twist. A ginger-soy-rice-wine sauce is tossed into a bowl of just-cooked pasta, shiitake mushrooms and red bell peppers. A sprinkle of parsley and it 's done.
