Eat your muesli! If you've never tried this granola-like breakfast treat, this is a great recipe. Lots of bran and oats and raisins and nuts, with just enough brown sugar to add a bit of sweetness. Serve as is with soy milk, or plop the bowl in the microwave and eat it warm.
Cooked leftover chicken can be tossed into this gumbo and simmered with tomatoes, mushrooms, chile peppers, a little of this and a little of that. Delicious chicken gumbo consistency with tomato base. Makes plenty to last for several days. Serve over hot cooked rice and sprinkle with filet powder, if desired.
A mixture of chicken, eggs, bread crumbs, sauteed onion, parsley and light seasoning make croquettes you'll go crazy for! My grandmother used to make salmon cakes; I adapted that recipe to use leftover cooked chicken.
